Citrus Ginger Sauce

INGREDIENTS

1 cup orange juice
¼ cup lime juice
¼ cup rice vinegar
¼ cup sliced shallots
¼ cup pickled ginger, coarsely chopped
½ teaspoon sugar
Freshly ground black pepper
Large pinch kosher salt
1/2 cup butter

PREPARATION

In medium sauté pan over medium high heat on Wolf gas range, add all ingredients except butter. Bring to a rolling boil. Boil for about 20 minutes to reduce the liquid to about ¼ cup. Reduce heat to simmer and whisk in butter until completely melted.

Serve with Salmon Cakes.

Makes ¾ cup sauce.
