Grilled Rib-Eye Steaks

INGREDIENTS

1-inch-thick bone-in rib-eye steak
Olive oil (for brushing)
1 tablespoon freshly ground black pepper
1 tablespoon coarse sea salt

PREPARATION

Bring grill to high heat. Keep one side of your grill unlit. Brush steaks with olive oil, then sprinkle both sides with cracked black pepper and sea salt.

Grill steaks on hot side of grill until marks form on the meat - about 3 minutes per side. Move steaks to unlit side of grill, cover, and let cook. It will take about 8 minutes to reach medium-rare state. When done, place steaks on a plate and let rest 10 minutes.
